Our blood gets its typical red colour from the protein haemoglobin (Hb). It is the most important component of red blood cells, also called the erythrocytes. The red blood cells have the task of transporting oxygen from the lungs to our body’s cells, where they remove harmful carbon dioxide as a metabolic waste product. This is where the blood pigment haemoglobin comes into play. Hemoglobin contains the trace element, iron, which binds oxygen and thus ensures its transport to the body’s cells. The body cannot produce iron itself and must absorb it from the food we eat. The daily requirement is about one to three milligrams. However, considerably more iron must be ingested with food.
Our requirement for iron can usually be met by maintaining a balanced diet. Iron from animal sources is best utilised and absorbed by the human body. Red muscle meat or liver are particularly good sources of iron. Good sources of plant iron are pulses such as lentils or soya beans, nuts and seeds such as pistachios or sunflower seeds, vegetables and herbs such as watercress, parsley and onions.
Iron uptake is enhanced by products containing vitamin C (e.g. orange juice), but certain foods can also inhibit our iron uptake. Young women in particular have a higher iron requirement for physiological reasons, as do adolescents in growth.
